What’s been going on at Chef Toni’s?
It was a short week because of the holidays which started celebrations on the same day for once making for double the food and double the fun! To celebrate both Thanksgiving and Hanukkah, we baked individual pumpkin pies and fried up batches delicious potato latkes served with a delicious homemade apple sauce that was quickly gobbled up by very hungry chefs at our Monday, Tuesday and Wednesday cooking classes. Easy Gluten-Free Potato Latkes w Chunky Apple-sauce
Make Apple sauce:
Combine 4-5 apples, peeled, cored and chopped with 1/4 cup sugar, 1/2 tsp ground cinnamon and 3/4 cup sugar in small saucepan. Cover and cook until apples are soft, about 15 to 20 minutes. Cool and mash to desired consistency.
Gluten-Free Potato Latkes
5 medium Russet potatoes
1 large sweet white onion, finely chopped
1/2 cup corn starch
1/2 teaspoon sea salt or more, to taste
A pinch of nutmeg (optional)
Safflower Oil for frying (or Peanut or Canola)
Peel potatoes and grate with a large-hole grater. Peel onions and grate with same grater.
Place both the potatoes and onion in a strainer and press out the liquid with paper towels or clean tea towel. Place in a large bowl.
In a small bowl beat eggs with the salt and nutmeg (if using) and add to the large bowl. Stir in the corn starch.
Mix all ingredients until well combined.
Heat an inch of Canola oil in a large deep-sided skillet. Form the potato mixture into tiny cakes and carefully drop them into the hot oil, pressing down lightly with spatula. Cook until edges start to brown then turn and cook until golden on each side, about 5 min, depending on size. Remove and drain on rack. Serve immediately with the applesauce and or sour cream and enjoy.
