Simple Pumpkin Soup

Count down to Turkey Day and in Honor of our Harvest Season we are teaching kids to cook with Pumpkins Galore!
Check out this recipe for Simple Pumpkin Soup you can try with your little ones at home!

Full of the flavor of roast pumpkin, it is perfect with a dollop of sour cream and a sprinkle of fresh chives alongside some crusty bread.



1 butternut pumpkin, peeled de-seeded and cubed
1 large potato, peeled and cubed
1 large carrot, peeled and roughly chopped
1 onion, diced
2 tbsp olive oil
4 tbsp chicken flavored stock powder or vegetable cubes
Salt and pepper; dash of cinnamon and touch of fresh ginger

Heat oil in a pan and saute all vegetables until golden.

Add 2 L boiling water to the pan and stir in stock powder or cubes and ginger.

Bring to the boil and simmer for 20 minutes until all vegetables are soft.

Using a stick mixer liquefy all the soup until it’s nice and smooth or use a blender.

Taste and season with salt and pepper and cinnamon accordingly. Add parsley for decor- it’s good for the body too!
